One of the dishes that represents the Bulgarian cuisine is banitsa, which is the perfect Bulgarian breakfast combined with ayran (yogurt, water and salt) or boza (usually made of barley). The recipe for banitsa is very simple. There are a couple of products, needed for its preparation.
- 350-400 gr. phyllo dough
- 5-6 eggs
- 1 tsp baking soda
- 3/4 cup melted butter
- 300-400 gr. Bulgarian cheese
- 100 ml oil
- 400-500 gr. sour milk
The first thing you should do is to whip the eggs in a bowl, then mix it with the sour milk. Stir the mixture and add some oil and the baking soda. The last ingredient to add is the cheese. Put down two sheets phyllo dough in an oiled baking dish, brushed out with butter. Pour enough of the commixture onto the dough and top two more sheets over it. Repeat the process a couple of times.
Leave some of the topping for the last sheet of phyllo dough. Then put the baking dish into the oven, warmed up in advance to 180 degrees, for 25-30 minutes. Make sure the middle of banitsa is baked by cutting a little of it. Once the dish is ready, cover it with a towel and let it cool for a while. Covering it lets the steam soften the sheets.
In the end comes the most delicious part – to cut it into pieces, serve it and of course, eat it.
