Cook&Eat: Tikvenik

One of the most traditional sweet desserts in Bulgaria is tikvenik (or banitsa with pumpkin). It’s also one of the dishes we have on Christmas Eve.
Here is the recipe for 12 portions:

 

 

 

 

 

  • 400 gr. sheets of pastry
  • 1, 2 kg pumpkin
  • 1 teaspoon sugar
  • ½ teaspoon raisins
  • ½ teaspoon grounded walnuts
  • 1 teaspoon chopped walnuts
  • ½ teaspoon cinnamon
  • 1 coffee spoon oil
  • 1.2 teaspoon powder sugar

The first thing you should do is to peel the pumpkin. After that cut it into pieces and grate it. Put the pumpkin in a stewpan, add the sugar and the oil. Stew it till the water boils and the pumpkin becomes a mash. Add the walnuts, the cinnamon, and the raisins. Let the mixture cool.
Take two sheets of pastry, grease them with oil and put some of the mixtures. Roll the sheets. Put the sheets in a baking dish. Repeat the same step till the sheets are over. Grease the tikvenik with oil or butter and bake it in a preheated oven (180 Degrees) for 50-60 minutes.
When it’s ready, let it cool and dust with powder sugar.
