Cook&Eat: Mekitsa

Mekitsa is a  very delicious Bulgarian traditional breakfast when prepared properly and combined with coffee, tea or the Bulgarian cold drink airyan (made by yogurt, water, and salt).

The classic recipe for mekitsa is simple. The needed products are:

 

 

 

 

  • 1 kg of flour
  • 1 cup of Bulgarian yogurt (sour milk)
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp sugar
  • Oil for frying

Now that you have the ingredients, the first thing you should do is to sift the flour in a baking dish and make a well in the center. Mix the salt and the baking soda in the yogurt until it rises and then pour it into the well. Start stirring it with a spoon, after that start kneading it by hand. When the dough becomes sticky, you should leave it to rise for 30 minutes. After that, you can tear off small portions of dough and roll them into balls. Do it with oiled hands. The last part is frying the balls till they get golden brown on each side. Serve the mekitsi hot. You can put on the mekitsi Bulgarian cheese (sirene), jam, chocolate or anything you like.
