You want a warm and delicious lunch with some typical Bulgarian taste? Try to cook panagyurishte eggs. It’s easy, fast, and most importantly – tasty.
You need just a couple of products to prepare your dish:
- 8 eggs
- 400 gr. sour milk (Bulgarian yogurt)
- 100 gr. Bulgarian cheese/ feta cheese
- 20 gr. butter
- 1/2 t.sp. red pepper
- 2 cloves garlic
With this amount of ingredients you can cook 4 portions of eggs panagyurishte style.
Pound up the cheese and mix it with the sour milk. Put the chopped garlic in the mixture. Serve the mixture into deep plates. In a stewpan pour some water and wait for it to boil. Then add salt and 1 t.sp. vinegar. Break the eggs gently into the pan and boil them for 2-3 minutes. With a slotted spoon serve the cooked eggs on top of the layer of feta and sour milk.
In a pan melt some butter and add the red pepper. Stir for about 20-30 seconds. Add the fried pepper to each portion. You can decorate the dish with shredded parsley.
