Cook&Eat: Bob Chorba

Bob chorba, or in English – bean soup, is an essential part of the Bulgarian cuisine. It’s warm, sating and goes really well with some sausages. The good news is that bob is very easy to prepare at home.

These are the ingredients for 10 portions of bob chorba:

 

 

 

 

  • 200 gr. white beans
  • 1 carrot
  • 1 onion
  • 1 pepper
  • parsley
  • red pepper
  • salt
  • oil – 4-5 t.sp.
  • spearmint leaves

First, you have to let the beans soak from the night before in cold water. Then strain the beans, add water again and let it boil. Change the water, remove the foam, then lower the degrees. Let it boil for 30-40 minutes. Add the chopped pepper, onion and carrot. After that add the spices and the oil. Let the beans boil for an hour until they become soft. Add some salt. When you serve bob chorba, you can decorate it with some parsley and eat it with Bulgarian cheese.
